Faux Chicken Fried Rice

(serves 2)

9oz chicken breast 
3 cups cauliflower
1 cup Egg Beaters (egg whites or even whole eggs will work too)
2 Tbsp Franks Hot Sauce


1) Slice chicken breast into thin strips, season with salt and pepper, then grill.
2) Spray skillet with cooking spray then pour in Egg Beaters and scramble. Remove from skillet.
3)Put cauliflower (raw or frozen) in the food processor and chop until desired size (about the size of a piece of rice). Heat cauliflower in skillet until desired tenderness (I prefer mine a bit less cooked than "rice")
4) Work in the other ingredients until well mixed. Add additional salt, pepper, hot sauce to taste.
